Like most Americans, I take breakfast REALLY seriously and weekend brunch is pretty much obligatory. However, like most Americans, I always overdo it when I eat out and end up with a side of heartburn so... I try to recreate a (slightly) more restrained version at home. Here's my quick and easy recipe to make your own fluffy (and healthy!) American-style pancakes. Pile them up with sliced fruit, chocolate shavings, crushed nuts and of course maple syrup or cream! There should be enough for four generous servings.
Ingredients • 2 c whole wheat flour • 2 tbsp raw sugar or stevia • 2 tsp baking powder • 1/2 tsp baking soda • 1/2 tsp salt • 2 c semi-skimmed milk • 2 eggs • 3 tbsp olive oil
• Fry Light extra virgin olive oil spray or equivalent
Method Whisk whole wheat flour, sugar/stevia, baking powder, baking soda, and salt in a bowl. Then whisk milk, eggs, and oil in a separate bowl and pour the milk mixture into dry ingredients. Stir just until combined (batter may seem a bit thick).
Heat a non-stick skillet over medium-low heat for 5 minutes. Spray the pan with Fry Light or equivalent and pour 1/4 cup of batter onto the hot skillet. Cook until many bubbles appear on top, 1 1/2 to 2 minutes. Flip and cook until browned and set in the middle, about 2 more minutes. Repeat with remaining batter.
While I'm cooking, I stack the pancakes on a plate and cover with aluminum foil to keep warm until they're ready to be served. If I'm feeling particularly gluttonous, I serve them with grilled breakfast sausages, scrambled eggs and/or crispy bacon.
